The All You Can Dream Buffet, by Barbara O’Neal, is a light summer read about the multigenerational friendship of 4 food bloggers. They come from very different backgrounds, yet they unite around their love of food, and their recipes are sprinkled throughout the book.
Warm Weather Dining
Watermelon Avocado Salad is one of the first recipes in the book that caught my eye. This time of year I crave dishes that scream “summer”, so this recipe jumped right off the page and into my kitchen. I adapted the dressing to my taste, but the basic recipe is close to the original.
Watermelon Avocado Salad
What a delicious and unique salad! The melon and red onion give a crunch that contrasts nicely with creamy avocados. I can’t seem to get enough of the piquant balsamic and pepper flavor against the cool watermelon sweetness.
As if you needed any more incentive, don’t forget that watermelon is consistently listed as one of the most nutrient dense foods. You get about 1/3 of your daily vitamin A and C per serving of watermelon, and it is rich in lycopene. And avocados are not only a healthy fat, but they are also a great source of fiber, folate, vitamin E, and potassium.
Make It a Meal
With a little feta or goat cheese, this salad is so satisfying that I can make a lunch of it. I recommend a heaping bowl of Watermelon Avocado Salad, served with veggies and bean dip, and a slice of fresh whole grain bread. For a dinner add grilled or baked salmon. Doesn’t that sound like summertime bliss?
