Tofu Fried Rice
In my last post, I outlined tips for preparing and cooking tofu. Today I want to give you one of our family’s favorite tofu recipes, tofu fried rice. It’s nearly a carbon copy of the chicken fried rice recipe that I posted last week. I thought it was worth it to make a separate post to really encourage you to try this with tofu. It also gives me the chance to highlight the unique steps to prepare tofu.
Tofu fried rice is a perfect dish to start with if you are new to cooking with tofu. The tofu easily blends with the familiar flavors and textures of rice, egg, and soy. Tofu, which is easily camouflaged anyway, becomes a flavorful background ingredient. It adds weight to the dish, but won’t stand out to your tastebuds.
I mentioned in my Tofu 101 post that the secret to easy and amazing browned tofu is buying pre-baked tofu. If you can get it like we do in our local grocery store, you have an easy pass to perfectly browned and delicious tofu. Here is a “where to buy” link for Nasoya’s tofu, just click into the TofuBaked products. You can also purchase through Amazon fresh. If you prefer regular tofu, it’s still easy to make deliciously browned tofu. Not yet convinced that tofu will be hearty enough as a main ingredient? Then I recommend trying half cooked chicken and half tofu in the recipe. Once you marinade and dry the tofu, you brown it the same as the cooked chicken, so it’s easy to combine these two.
I had 10 adult taste testers and 9 kid testers outside of our family (most are pictured here), and all gave this dish a thumbs up. Most often the adults noted the flavorful addition of fennel and black beans. A number of testers couldn’t believe I used brown rice and were encouraged make the switch for this dish. The kids especially liked the eggs. One kid tester said it was the best fried rice she’d ever had. Another kid tester kept commenting on how yummy the “chicken” was. I didn’t let on that it was tofu. How can you not try this dish after seeing all of these satisfied and happy testers?
