Shrimp, snap peas, pineapple. Protein, vegetable, fruit. It’s such a simple meal, I probably would have overlooked a recipe like this if it hadn’t been for my daughter waving it in my face.
June found a shrimp kabob recipe in one of the homemade cookbooks I cut and pasted together as a teenager. I rediscovered these recipe books as I was cleaning out our storage closet, and June’s been happily perusing their worn and torn pages. When she came to a picture of shrimp skewers, her eyes nearly popped out of her head: Eureka!
Shrimp Skewers for A Quick Meal
We are a seafood loving family, and most often enjoy our shrimp sautéed and served on pasta or whole grains. After seeing June’s recipe, I realized we’d never made a meal of boiled shrimp skewers. It looked like fun food to June, so we devised our own easy version. And because she is like most kids and loves to dip, we came up with 2 zippy sauces.
Delicious! I was taken aback at how much I enjoyed this simple 3 ingredient main dish. The peas and shrimp are each cooked in about 3 minutes, and the sauces (2 or 3 ingredients) can also be ready in a snap. It’s rewarding to reap so much pleasure out of so little work!
Shrimp Skewers for All Occasions
June served the shrimp skewers to our family for breakfast, which gave us enduring energy for the rest of the morning. But shrimp skewers are perfect for any meal of the day, or they make an easy and elegant appetizer too.
To complement your shrimp skewers, I recommend serving it with couscous or quinoa (recipe coming soon), and a nice green salad with avocados and tomatoes.
You’ll save time if you don’t skewer and just serve the shrimp, peas, and pineapple family style in individual big bowls. But there’s something about those little food spears that add a festive air to the meal. (Here’s some 4″ bamboo skewers like the ones we use.) Plus, skewering is a fun family activity. Gather everyone around to pierce and prep the skewers. Make plenty so you can grab and gorge guilt-free like you’re at a crab fest. Enjoy your dinner simplicity!
