My niece Tessa first prepared Spinach, Artichoke & Hummus Panini for our family about a year ago. I remember that initial bite of this dreamy, healthy sandwich. June and I exchanged wide-eyed glances, then we all raved over our paninis. I was astonished to be served such deliciousness so fast and with only 5 ingredients. While anything Tessa makes is guaranteed to be scrumptious, we can’t help but request this recipe on her every visit now!
Kid Friendly Cooking
Over the summer, June decided we just couldn’t wait until Tessa’s next visit, so she made it her mission to learn how to make this yummy, nutritious sandwich.
It’s so simple! In fact, it’s a perfect recipe for your kids to make with supervision. There isn’t much chopping, and the stovetop cooking is for heating rather than really cooking, so the instructions are very forgiving! Also, toasting the sandwiches by skillet or griddle is just plain fun and smells so good!
I like seeing the pride in June after making these sandwiches for her friends and family. There’s something about cooking on the stove that gives June a greater feeling of accomplishment in the kitchen. Like she’s a real cook.
Weekend Lunch Special
Although we love variety, it’s hard not to make these paninis every weekend. How can we resist?
It’s fun to have a special weekend lunch, and we often lean toward healthy sandwich options. Along with our egg salad, salmon salad lettuce wraps, and avocado chicken, spinach, artichoke & hummus panini is now firmly entrenched in our weekend lunch repertoire.
When you think of panini, you probably aren’t thinking about its nutritional value. I think of buttery toast and extra-cheesy fillings.
This recipe is a different kind of panini. It retains the toasted goodness on the outside but uses olive oil instead of butter. There’s still a creamy inside, but with only a bit of cheese (which is optional), getting most of its rich, smooth texture from hummus.
When we have leftovers, I sometimes serve this healthy sandwich for either breakfast or dinner. Like eggs, paninis taste good any time of the day. Hope you enjoy them as much as we do. Sending a special thanks Tessa for this one!
