Curried Cauliflower Mash is a Mom recipe. My mom was making this dish at Thanksgiving many years before the low-carb craze, and our family carries on the tradition. What’s amazing to me is that this mashed cauliflower recipe still retains the comfort food satisfaction of traditional mashed potatoes.
Cauliflower Mash Supreme
There are a few keys to making the best cauliflower mash. Flavor layering is one essential. Browned onions, broth, and curry give neutral cauliflower lots of interest. Adding creaminess makes it a more authentic mash. Greek yogurt adds this creaminess without compromising nutrition.
Some in our family like it super smooth and some like a chunkier cauliflower mash. I can split my batch after a few whirls in the food processor to please all palates. I love how Greek yogurt adds creaminess and a bit of tang, but Jake likes it dairy-free, so I do a batch without the yogurt as well.
Thanksgiving Side Dish
Curried Cauliflower Mash is a great addition to the Thanksgiving table. It can be made ahead and reheated in the microwave or oven. Although it’s delicious as is, garnishes like cilantro and pine nuts add texture and elegance.
