Apple Oat Balls maintain a constant presence in our fridge since apple season started last month. I just keep making batch after batch! Although I make all kinds of apple dishes this time of year, this one is a current favorite in our household.
Oats, apples, peanut butter, and coconut—what’s not to like? Apple Oat Balls are a great healthy snack for after-school munchies or a little something fun in the lunchbox. They’re also a perfect grown-up treat too—not overly sweet, wonderfully rich and chewy. They are similar to the Date Balls I posted earlier this year, but apples are a less expensive variation for energy balls, and a little easier to handle when preparing them.
I was inspired by this Apple-Oat Energy Balls recipe I discovered last fall. I adapted it to my tastes, adding more apples, less salt and a little lemon for freshness. Let the kids join in on the fun of making these too—especially the rolling and dipping to coat the balls. Hope you enjoy these delicious and nutritious apple oat bites!
